Cupcakes
I haven't done a "Cupcake" post in awhile but I've had SO MANY people ask me about the Grape Fanta & Twix cupcakes that I thought I'd share the recipes.
Grape Fanta Cupcakes
(Ode to Belly from the "Summer Series" by Jenny Han) I played around with this one after striking up a twitter friendship with PatchsOtherGirl Jenn. If you like these then you can thank her. If not, well then, feel free to use them for a cupcake fight with neighbors (like a snowball fight only messier), composting or put them in File 13. ;D
1 Stick butter (salted)
3 eggs

2 cans Fanta Grape Soda** (one for the recipe and one to drink while baking)
2 1/2 C self-rising flour
1 1/2 C sugar
1tsp vanilla
2 1/2 C self-rising flour

Purple food coloring* The soda alone will not make the batter purple enough so you'll need to add color otherwise they look gray and sickly which is kinda gross.
Combine the flour and sugar and mix for about 2 minutes. Then add in butter (softened but not melted), 1 can of soda and vanilla and beat for 2 minutes. Then add in eggs, one at a time - beat for 2 more minutes. Add in food coloring and mix until purple color has been achieved. Batter will be runny.

Bake for 15-18 min at 350 degrees. (Makes about 36 regular cupcakes)
I topped mine with vanilla butter cream frosting but you can put whatever you like on them.
TWIX Cupcakes
(My FAVORITE candy bar)
1 3/4 C Self rising flour
2 C Sugar
3/4 C Cocoa Powder
1 tsp Baking Soda
2 Eggs
1/2 C Canola oil
1 tsp Vanilla
1 C Strong black coffee (cooled off)
1 C Buttermilk* (You can make buttermilk by taking a 1 Cup measuring cup, pouring 1 TBS of white vinegar in and then adding milk to bring it to a full cup. Let sit for approx. 15 min and then use.)
Graham crackers
Caramel
sauce (I use a homemade recipe I found through a friend on the Internet
but you could probably substitute with jar kind.)
Combine dry ingredients in a large mixing bowl and mix until blended. Add eggs, buttermilk, oil, vanilla and coffee. Mix at medium speed for 2 minutes. (Batter will be runny) Pour batter into pan and bake for 15 minutes (for cupcakes) at 350 degrees.**
**Line cupcake pan with cupcake papers. Place 1 small square of graham cracker in the bottom of each cupcake liner, fill with cake batter and bake for 15 - 18 minutes at 350. (Makes about 24 cupcakes)
When cupcakes come out of the oven, scoop out the top (I used a melon scooper but a baby spoon works well too.) and fill with caramel sauce. (Try to abstain from eating the warm, gooey, super delicious cupcakes prior to frosting. It will be difficult but you can do it!)
Top with chocolate buttercream frosting and enjoy! I made two versions of this the first time around and the graham cracker in the bottom was the preferred choice.

I would have NEVER thought of grape Fanta cupcakes ! That is so crazy, but they look so good.

ReplyDeleteYUM!!! Twix's are my favorite too. I wish I could bake cupcakes, but alas, I find premade cookie dough a challenge to bake.
